I love potatoes, so I’ll take any excuse I can get to make potatoes as a side dish.  These potatoes have a hint of onion flavor without overpowering the rest of your meal.  Quick and super easy to make, these oven-roasted onion potatoes are the perfection option for any weekday or weekend meal! Oven Roasted Onion Potatoes

SERVES 4-5
40 MINUTES  (PREP & MAKE)

INGREDIENTS

4-6 large potatoes
1/3 cup olive oil
3/4 cup dried minced onion
1/3 cup beef bouillon powder
4 teaspoons onion powder
1/4 teaspoon celery salt
1/4 teaspoon smoked paprika
1/4 teaspoon black pepper
1/4 teaspoon parsley flakes
1/4 teaspoon sugar
1/4 teaspoon thyme
2 cloves garlic
pinch of salt

INSTRUCTIONS

Pre-heat your oven to 425°F.
Wash and cut potatoes into cubes.  I like leaving the skin on the potato, but you can also choose to peel the potatoes first.
Place potato cubes on a baking sheet, add sliced garlic and mix well with olive oil.
In a separate bowl, mix together all remaining ingredients and slowly pour over potatoes, mix well.  Place in oven and cook for about 20-25 minutes.  I usually try to stir the potatoes at the 15-minute mark.
Once done, remove from the oven, let cool and serve as an accompaniment to beef, chicken or fish.
