Hot chocolate fondant puddings

Recipe makes 4

125g Good dark chocolate — anything with more than 75% cocoa content. I like green and black’s which has 85% cocoa
125g butter
3 eggs
150g castor sugar
35g plain flour

Melt chocolate and butter in a double boiler( ie- in a bowl or pot suspended over a pot of boiling water). Mix the butter ano chocolate as it melts. Cool.

Beat the eggs with the sugar and then add the flour.

Fold in the cooled chocolate.

This mixture can be made ahead of time and then baked as you need them.
Spoon into 4 ramekins which have been greased and floured (grease with butter or spray with nonstick spray then sprinkle a little flour to coat the bottom and sides)

Heat the oven to 200 degrees and place ramekins into the centre of the oven for 12-14 minutes.
The tops should just start to split/crack.

Just so delicious.
Enjoy these hot chocolate fondant puddings with cream, custard or as they are👏👏👏👏
