The upcoming festive season is traditionally a time to spend in the company of friends and family. With this merry time fast approaching, I thought I would share a festive winter recipe. I hope you enjoy this Christmas Carrot Cake.
2 cups grated carrots(about 4 medium carrot)
1 grated apple (sprinkle a slash of lemon juice over)
1 cup oil
1 cup sugar
2 cups self raising flour (sifted)
1 tsp bicarbonate of soda
2 tsp baking powder
1 tsp cinnamon
1/4 tsp ground cloves
1/4 cup coconut(optional)
1/4 cup walnuts (optional)
3/4 cup raisins
200g cream cheese
1/4 tsp cinnamon
400g icing sugar
Sprigs of Thyme
Handful of granola
Icing sugar to sprinkle
Preheat oven to 180 degrees.
Mix eggs and oil. Add sugar. Sift in dry ingredients. Add in carrots,apple,raisins and nuts(I use a food blender so just blitz for about 10 -20 seconds).
Line a round or large loaf baking tin. (I spray the paper lightly with frylight as well)
Bake for approximately 50 minutes. Leave to cool on a wire rack , then turn out of the tin.ALlow to cool completely before icing and decorating.
Beat butter, cream cheese, icing sugar and cinnamon until smooth.
Ice the cake
